I really haven't looked too deeply into the 'trainers' (as cheat tools seem to be called these days).... it's possible that you can tweak individual stats (such as bike riding) with some of the more complex trainers... you'd really have to check some of them out... http://www.thegtaplace.com/pafiled...

Scythe's comments has reminded me that there are trainers available which can raise your skill level for the bike (or indeed raise any skill) so if all else fails have a look for these - one I'm thinking of is by a guy called PiZZAbox - you'll find some of his stuff here... http://www.gameburnworld....
